Woffers!

It's a collision of so many wonderful things: waking up early, sunshine!, cooking with friends, good talks over pancakes, eggs, carbs galore and syrup. And after you're done and thoroughly stuffed, you still have a whole day ahead of you!
My favorite to make for guests is buttermilk chocolate chip pancakes, but my roommate saying, "Woffers, woffers!" convinced me to try her waffle maker. And I'm so glad, because these homemade waffles are so good! And funny...when you're saying "woffers!" in your head as you eat them :)
Belgian Waffles
adapted from smitten kitchen, from How to Cook Everything, Mark Bittman
Ingredients:
- 2 cups all-purpose flour
- 1/2 t salt
- 2 T sugar
- 1 1/2 t baking soda
- 1 3/4 cups buttermilk
- 2 eggs, separated
- 4 T (1/2 stick) butter, melted and cooled
- 1 t vanilla extract
- canola oil spray for the waffle iron
- Combine the dry ingredients.
- Mix together the buttermilk and the egg yolks. Stir in the butter and vanilla.
- Spray the waffle iron with oil and preheat it.
- Stir the wet into the dry ingredients.
- Beat the egg whites by hand or electric mixer until they hold soft peaks. Fold them gently into the batter.
- Spread a ladleful or 2 of batter onto the waffle iron and bake until the waffle is done, 2-4 minutes.
- Serve with lots of SYRUP. :)
Woffers are best shared with good friends in aprons.
