Cranberry White Chocolate Oatmeal Cookies

These were the first cookies I baked in our new apartment, so I placed them in a (tupperware) cookie jar for my roommates! It's a pretty solid recipe for oatmeal cookies, but I think they'd be a lot better with the cardamom that I couldn't find.

Ingredients:

  • 1 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 t pure vanilla extract
  • 1 1/2 cups flour
  • 1/2 t salt
  • 1 t baking soda
  • 1 t cinnamon
  • 1/2 t nutmeg
  • 1/4 t cardamon (didn't use this time!)
  • 3 cups rolled oats
  • 1 cup dried cranberries
  • 1/2 cup white chocolate chips

Steps:
  1. Preheat oven to 350 degrees. 
  2. Cream butter and sugars until fluffy. 
  3. Add eggs and vanilla. 
  4. Combine dry ingredients. Add to butter mixture and stir until well blended. 
  5. Add dried cranberries. 
  6. Drop by teaspoonful onto parchment covered baking sheet. 
  7. Bake about 10 to 12 minutes, or until lightly golden. Cool.
