Cranberry White Chocolate Oatmeal Cookies

These were the first cookies I baked in our new apartment, so I placed them in a (tupperware) cookie jar for my roommates! It's a pretty solid recipe for oatmeal cookies, but I think they'd be a lot better with the cardamom that I couldn't find.
- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 t pure vanilla extract
- 1 1/2 cups flour
- 1/2 t salt
- 1 t baking soda
- 1 t cinnamon
- 1/2 t nutmeg
- 1/4 t cardamon (didn't use this time!)
- 3 cups rolled oats
- 1 cup dried cranberries
- 1/2 cup white chocolate chips
Steps:
- Preheat oven to 350 degrees.
- Cream butter and sugars until fluffy.
- Add eggs and vanilla.
- Combine dry ingredients. Add to butter mixture and stir until well blended.
- Add dried cranberries.
- Drop by teaspoonful onto parchment covered baking sheet.
- Bake about 10 to 12 minutes, or until lightly golden. Cool.
