Mario Brothers Cupcakes!

I wanted to experiment a little with fondant before making a wedding cake (so inspired when my friend Janny said she made her own fondant!), but didn't want to waste the fondant, so I made toppers for these cupcakes that were for our church's brothers appreciation. After making Mario themed decorations, all those cute stars and clouds and my favorite! Toad!! was stuck in my head, so I had to make Mario Bros. cupcakes for our bros! So glad we sisters had the opportunity to show our appreciation to the men in our church for all they do and for the way they are Godly leaders each in their own ways. We are blessed.


The fondant was easier than expected to make, and so much cheaper than store-bought, since it mainly consists of marshmallows and powdered sugar. But it was SO STICKY! I had no idea how difficult it was to knead. Rubbing butter all over my hands was the only way to get anything done!

Marshmallow Fondant

Ingredients:
  • 1/4 c butter
  • 1 (16 oz.) pack of mini marshmallows
  • 1/4 c water
  • 1 t vanilla extract
  • 2 lbs. confectioners' sugar

Steps:
  1. Place butter in a shallow bowl. Set aside.
  2. Place marashmallows in a large bowl and microwave on high for 1 minute to start melting them. Stir the water and vanilla into the hot marshmallows and stir until smooth. Slowly beat in confectioners' sugar 1 cup at a time until you have a sticky dough. Reserve 1 cup of confectioners' sugar for kneading. The dough will be very stiff.
  3. Rub your hands with butter and begin kneading the dough. As you knead, the dough will become workable and pliable. Turn the dough out onto a working surface dusted with confectinoers' sugar and knead until smooth and no longer sticky to the touch (5-10 minutes).
  4. To color, incorporate coloring gel as needed.
  5. Form the fondant into a ball and wrap it in plastic wrap. Refrigerate overnight.
  6. Bring to room temp and roll out onto a flat surface dusted with confectioners' sugar.
**Cutting them into shapes was a whole 'nother challenge. I don't have many cookie cutters, so I just used random water bottle sports caps, frosting tip caps, cups...whatever was lying around the kitchen. You'd be surprised what random things you can find that will work!!
